Our Passion for Matcha
The matcha we use is made from tencha, grown under shade to limit its exposure to sunlight. This cultivation method preserves theanine in the leaves, resulting in a rich umami flavor with minimal bitterness.
Once harvested, the tencha is slowly ground using traditional stone mills. This delicate process yields only about 40 grams of matcha per hour, as faster grinding would generate frictional heat and damage the delicate tea components.
The result is an ultra-fine powder with a deep, complex flavor and a rich, aromatic fragrance.
